vegetable Chowder


Vegetable Chowder 


Recipe: 
3 baking potatoes
1 cup of carrots
1 medium onion
2 stalks of broccoli
1 stalk of cauliflower
2tbsp minced garlic
1 cup heavy cream
32 oz vegetable broth
1 cup of water
salt/pepper to taste
3 tsp basil

optional:
1 cup sharp cheddar cheese
1 cup mozzarella


Instructions:

In a large pot begin by tossing in your chopped onion and minced garlic. Sauté 1-2 minutes. Add carrots and basil to the pot continue to sauté for 2-4 minutes until almost softened. Add the rest of your veggies, water and vegetable broth bring to a simmer and cook for 20 minutes. Stir in heavy cream. If adding cheese continue to simmer on low heat 5-10 minutes. Making sure to stir constantly as the cheese will stick to the bottom of the pot. Let cool and serve!

Perfect for the fall weather and all things soup.
