Cauliflower Mac N Cheese




A few weeks ago my cauliflower Mac N Cheese was requested and I apologize for taking so long to post it. Lately life has been chaotic but thankfully while we are home visiting family I have been able to do a little experimenting in the kitchen. 



Recipe:

1 lb. fresh or frozen cauliflower
1 cup heavy cream
1tbsp minced garlic
1 cup Sharp cheddar cheese
1 cup mozzarella
salt & pepper to taste

Additional topping(optional):
1/2 cup pork rinds


Pre heat your oven to 350

I have made this recipe several times and find it tremendously better with frozen cauliflower. Not to mention it cuts your cook time almost in half! Begin by placing the heavy cream in a medium size pot. Bring to a boil. While your heavy cream is reaching the right temp grate your cheese (shredded cheese can be used in this recipe but I find it more difficult to melt compared to block cheese). Once the heavy cream begins to boil reduce to medium heat and place minced garlic, cheddar, and mozzarella into the pot. While your cheese sauce is simmering prepare your cauliflower according to the packaging or if using fresh until it is tender. Make sure to occasionally whisk your cheese sauce so it does not burn or stick to the bottom of your pot. Once your Cauliflower is finished cooking place into a lightly oiled (I use olive or coconut oil) baking dish. Your cheese sauce is finished simmering once it gently drips down off of your whisk. If the cheese has not melted into the correct texture it will not cover the cauliflower completely. Which will result with cheese sauce on top and bare cauliflower on the bottom. Poor cheese sauce over your cauliflower. Bake in the oven for 20-25 minutes at 350. 

If you wish to add a bread crumb like topping place a handful of pork rinds into a food processor and blend until desired texture. If you do not have a food processor you can place in a sandwich bag and crush with any cooking utensil available. Sprinkle over cauliflower mac N cheese before placing in the oven.
